  • about 454 g baby spinach, roughly chopped
  • 1 can (400mL)  coconut milk
  • 1 to 2 tbsps of thai curry paste
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 1 small onion, finely sliced
  • 1 tbsp sugar
  • soy sauce and/or sea salt (for seasoning)

1. Heat a large saute pan on high.

2. Once hot, scoop the coconut cream from the top of the can and add to the pan.

3. Add in garlic, ginger, curry paste and onions.  Turn down to medium heat.

4. Cook until onions are soft (about 5 minutes).

5. Add the remaining contents of the coconut can.

6. When the liquid begins to bubble, add in spinach gradually.  Stir often.

7. Add in sugar and 1 tbsp of soy sauce (or a sprinkle of salt). Mix well.

8. Allow spinach to simmer for about 15 to 20 minutes or until majority of the liquid has evaporated.  The spinach will turn a deeper green and its volume will reduce significantly.

9. Finished. This dish goes well with a bowl of steamed rice.  Enjoy.

Spanakopita

Spinach and feta filled phyllo pastries (spanakopita).

Spanakopita are savoury spinach filled phyllo pastries and originates from Greek cuisine.

  • 10 phyllo sheets
  • 500 g baby spinach, chopped
  • 1/3 cup feta, crumbled
  • 1/4 cup plain bread crumbs
  • 4 cloves garlic, finely chopped
  • 1 large egg, beaten
  • 3 to 4 tbsps canola oil
  • sea salt and freshly ground pepper

1. To make the spinach filling, heat a saute pan on high heat.

2. Once the pan is hot, add in 1 tbsp of oil and the garlic. Cook until the garlic is a golden brown. This will only take a few seconds.

3. Add in the spinach. Turn down to medium heat. Stir occasionally.

4. Once the spinach has wilted, season with salt and pepper. Remove from heat and let the spinach cool for a minutes, then drain any liquids that has collected in the pan.

5. In a large mixing bowl, add in the spinach, egg, bread crumbs and feta. Mix well.

6. On a lined baking sheet, oil the bottom and sides.

7. Place two sheets of phyllo on the baking sheet.

8. About one inch from the edge, add a row of spinach filling.

9. Roll the phyllo tightly and tuck in the ends.

10. Repeat four more times.

Cut the phyllo rolls before baking.*

11. Brush  a little oil on top of each phyllo roll.

12. Before baking, cut the phyllo into desired sizes.

13. Bake in a preheated oven at 325ºC for 15 to 20 minutes or until golden brown.

14. Let spanakopita cool for a few minutes before serving.

Wine Tasting: A follow up

I attended another lively wine tasting with host Rose Vogt (the first wine tasting can be found here). The theme at the second wine tasting was a comparison of old world versus new world wines. In particular, Pinot Grigio versus Malbec wines.

The following white wines, all Pinot Grigio, were sampled first (year, alcohol, sugar* and price):

The following red wines, all Malbec variety, were sampled after the Pinot Grigio.

Rose is also an avid cook. She made fresh vibrant shrimp and spinach salads with homemade vinaigrette  to pair with the Pinot Grigio as well as beautiful lamb and mushroom skewers for the Malbec wines. Pinot Grigio often goes well with seafood or a creamy pasta. Pinot Grigio is also suggested as a before-dinner wine. Many of the Malbec wines are often ideal accompaniments to barbecued meats or roasted vegetables.

The evening was capped off with a sinfully sweet Port by Taylor Fladgate.  This was the first time I had ever tried port. It had a rich golden brown colour and tasted like sweet liquid gold. The Port was a lovely treat and a great way to end the wine tasting.

Some additional tips and tidbits I learned from Rose:

  • Port is a fortified wine.
  • Some young wines can be purchased and then aged in the bottle for several years. This is a money saver as wine makers charge extra for aged wines.
  • A bottle of wine that smells like wet sock has gone bad and can usually be returned to the store of purchase.

*Sweet is the flavour of sugar in wine; dry is the opposite of sweet. Extra dry lies somewhere between sweet and dry. A rating of 2 is more sweet than a rating of 1.

Meat and Spinach Lasagna

The following is a lasagna recipe made with layers of meat sauce and spinach, then topped with grated cheddar and mozzarella cheese.

To make the meat sauce, you will need the following:
  • 1lb of extra lean ground beef
  • 1 small onion, peeled and chopped
  • 1 can (794 mL) of crushed tomatoes
  • 2 tbsps of extra virgin olive oil
  • 3 cloves of garlic, peeled and finely chopped
  • 2 tbsps of sugar
  • 1 cup of red wine
  • 1/2 cup of water
  • 1 tsp each of paprika and oregano
  • salt and pepper to taste
Heat a large pot on high.  Once the pot is hot, add in the olive oil, onions and garlic.  Cook until the onions are soft and appear translucent, then add in the ground beef.  Using a wooden spoon, break up the ground beef into as small pieces as possible.  Once the beef is cooked, add in the paprika, oregano, salt, pepper and sugar.  Mix well and then add in the red wine, water and crushed tomatoes.  Stir the sauce and meat, then let simmer for an hour.  Do not stir while simmering because over time the meat will sink to the bottom and the top of the meat sauce will be mostly liquid.  You will need to use this liquid later.

To make the spinach layer, you will need the following:
  • 454g of baby spinach, julienned
  • 454g of ricotta
  • 3 cloves of garlic, peeled and finely chopped
  • 2 cups of skim milk
  • 4 tbsps of flour
  • 4 tbsps of extra virgin olive oil
  • salt and pepper to taste
Heat a medium sauce pan on high.  Once the pan is hot, add in the olive oil and garlic.  Brown the garlic and then sprinkle the flour in evenly and thinly.  Cook the flour for about 30 seconds, and then add in 1 cup of milk.  When the milk begins to heat up, it will thicken because of the flour.  Stir well and break up any flour clumps that may have formed.  Add in the remaining milk and a handful of spinach.  Mix well and once the spinach wilts, add in another handful of spinach until all the spinach as been placed into the pan. There should be enough milk in the pan to cover the spinach; if not add in more milk.  Simmer for about 15 minutes and add salt and pepper to taste.  Remove from the heat and add in the ricotta and mix well.  Have a taste to see if more salt is needed.

Prepare the lasagna pasta as instructed on the packaging but reduce the cooking time by half.  The pasta will finish cooking in the oven.  I like to use Catelli Healthy Harvest Whole Wheat Pasta.

Once the meat sauce, spinach and pasta is ready, it’s time to assemble the lasagna. Take a deep baking dish that will fit the lasagna sheets and four thick layers of meat sauce and spinach, butter it with unsalted butter.  Scoop out some of the liquid from the top of the meat sauce and place it on the bottom of your baking dish.  Doing this will prevent the bottom of your lasagna from drying out.

Cover the tomato sauce with a layer of the lasagna sheets.  If needed, use a pair of scissors to trim the pasta so that it fits perfectly into the baking dish.

Place half of the remaining meat sauce on top of the lasagna sheets. Spread evenly over the pasta.

Place another layer of lasagna sheets and then spread half the spinach and ricotta mixture evenly over the pasta.

Repeat the procedure.  That is, place another layer of lasagna sheets on top of the spinach and ricotta, then spread the remaining meat sauce evenly over the pasta. Add the final layer of pasta on top of the meat sauce. On top of this layer of lasagna sheets, spread the remaining spinach and ricotta evenly over the pasta. Grate about one cup each of cheddar and mozzarella cheese. Sprinkle the cheeses evenly on top.  Make sure that there is cheese covering all the way to the edge of the lasagna.  The lasagna is now ready to be baked in the oven.

Place lasagna covered in a preheated 400°F oven for 45 minutes.  It’s important to cover the lasagna, otherwise it will dry out in the oven.

Cover the lasagna before placing in the oven.

After 45 minutes, remove the cover and bake at 450°F for another 5 minutes or until the top turns a golden brown.

Remove from the oven and let cool for about 15 minutes before serving.  Waiting until the lasagna has cooled down a bit makes cutting the lasagna a lot easier.

Spinach Ricotta Pasta

Spinach and Ricotta Sauce with Cherry Tomatoes

  • 1 package of your favourite pasta, cook as directed
  • 1 large bag of baby spinach, julienned
  • 3 cloves of garlic, finely chopped
  • 1 container (about 475 grams) of ricotta
  • 1 pint of cherry tomaotes, halved lengthwise
  • 1/4 cup of parmesan cheese, finely grated
  • 1.5 to 2 cups of milk
  • 2 tbsp of flour
  • 2 tbsp of extra virgin olive oil
  • salt and pepper to taste

Heat a large sauce pan on hot.   Once the pan becomes hot, add in the olive oil and garlic. When the garlic has browned (about 1 minute), sprinkle flour evenly and thinly over the pan.  Add in half the spinach and milk.  Once the spinach has wilted, add in the remaining spinach and turn down the heat to a gentle simmer. Cook the spinach mixture for 10 to 15 minutes, adding more milk if required and add salt and pepper to taste.  When the spinach is finished cooking, add in the ricotta and parmesan cheese. Stir until the mixture is thick and smooth.  Right before serving, add in the cherry tomatoes to warm them through (this will only take a minute). Do not overcook the cherry tomatoes.

Mix the spinach and ricotta sauce with the pasta.  Sprinkle grated parmesan cheese on top if desired. Serve immediately. This dish makes four sides or two generous dinner portions.

Spinach and Ricotta Manicotti

Spinach and Ricotta Manicotti

Bring a large pot of salted water to a rolling boil.  Gently, add in the manicotti pasta shells and cook until just soft. Usually this is half the time recommended on the pasta package. The pasta shells will finish cooking during the baking process. Drain and rinse with cold water. Set aside until ready for assembly.

Tomato Sauce

  • 1 large (796 mL) can of crushed tomatoes
  • 4 cloves of garlic, minced
  • 10 mushrooms, minced (optional)
  • 1 small onion, diced
  • 1 cup of red wine
  • 1/2 cup of water
  • 1 tbsp of sugar
  • 1 tbsp of extra virgin olive oil
  • 1 tbsp of butter
  • 1/4 cup of parmesan cheese, finely grated
  • salt, pepper, oregano, thyme, bay leave (add which ones and however much you like)

Heat up a large pot on high and when it becomes hot, add in the olive oil and butter. Once the butter has melted, add in the garlic, onions and mushrooms. Cook until onions and mushrooms are soft and then add in the spices and sugar. Pour in the liquids (crushed tomatoes, red wine and water) and add the parmesan cheese. Mix well. When the sauce starts to bubble, turn down the heat so that the sauce is gently simmering. Simmer for about 10 to 15 minutes. Remove bay leave before using.

Filling

  • 1 bag of baby spinach, julienned
  • 400 g of ricotta
  • 1 egg
  • 4 cloves of garlic, minced
  • 1 tbsp of flour
  • 2 tbsp of extra virgin olive oil
  • 2 tbsp of parmesan cheese, finely grated
  • 2 cups of milk
  • salt and pepper to taste

Heat a sauce pan until hot and then add in the olive oil and garlic. Brown the garlic. Sprinkle the flour evenly and thinly over the garlic, then add in the spinach and milk. Mix well with a wooden spoon. Turn down the heat so that the spinach-milk mixture is simmering. Add in the parmesan cheese, salt and pepper. Simmer for 10 to 15 minutes or until most of the liquid has evaporated.  Set aside to cool. Once cooled, add in the ricotta and egg. The egg will help the filling set during baking. It is important the filling has cooled, otherwise, the egg will scramble.

On a side note, this spinach-ricotta mixture (without egg) can be used as a light cheese sauce on pasta.

Assembly

In a casserole dish, pour enough tomato sauce to cover the bottom of the dish. Fill the manicotti with the spinach-ricotta mixture. Once the casserole dish is filled with stuffed manicottis, pour enough tomato sauce to cover the manicottis. Continue with the second layer. Pour the remainder of the tomato sauce into the casserole dish so that the manicottis are entirely covered by the tomato sauce. Grate a light layer of parmesan cheese on the top.

Bake covered at 400°C for half an hour. Remove cover and bake for another 10 to 15 minutes. Let cool for about 5 minutes before serving.
